When you starve yourself you slow your metabolism down. If you're barely eating, your body burns less energy to compensate for the lack of calories coming in. Now that you're eating normally, your body's metabolism is picking up pace and burning all those extra calories. It's only when you start eating TOO much that you start gaining weight again.
